Abstract
THE yeast Candida ingens grows well on both fermented pig wastes and rumen fluid and uses volatile fatty acids (VFA) C2–C6 as a source of carbon and ammonia as a source of nitrogen1,2. The in vitro fermentation of pasture also provides a suitable medium for the growth of C. ingens. This report provides evidence that pasture may be converted into edible protein in the form of yeast. The conversion is 16 times more efficient than in beef-producing animals. The method has potential for use in protein-deficient countries.
